No Fuss Cabbage Fritters
1 1/2 cups white cabbage, finely chopped or grated
2 eggs
3 tablespoons flour
1 teaspoon dry oregano
1 tablespoon olive oil
salt and pepper, to taste
Dipping Sauce:
1/2 cup plain yogurt
1 tablespoon olive oil
1 pinch cayenne
1 tablespoon baby dill, chopped
salt and pepper to taste
For Frying:
1/2 cup olive oil
Mix well all fritters ingredients. Preheat olive oil to medium high heat in frying pan. Scoop about 1 tablespoon to form 1 fritter. Fry fritters for about 2 minutes per side or until they are golden brown. Mix all dipping sauce ingredients together and serve with piping hot fritters.
