Tasty Green Onion Fritters

Tasty Green Onion Fritters
7 ounces buttermilk
7 ounces flour
1 egg
2 ounces green onions (green tops only)
1 teaspoon baking soda
1/2 teaspoon salt
Oil for frying
Additional whole green onions
Sour cream to taste
Pour buttermilk into a bowl, add baking soda and mix well. Break an egg into
a large bowl, season with salt and stir to combine. Mix in buttermilk.
Gradually, in small batches stir in flour, forming a batter that should have
no lumps and reach a consistency of thick sour cream. Finely chop green
onion tops and mix into batter. Heat oil in a skillet. Dip a teaspoon into
hot oil, then use this spoon to measure out a portion of the batter, drop it
into skillet. Measure out all fritters and fry over medium heat on both
sides until golden. Finely chop a bunch of green onions, combine with sour
cream and serve this sauce with fritters.
