Southern Fried Chicken And Fritters
2 eggs
2 tablespoons milk
1 cup bread crumbs
1 1/2 pounds boneless, skinless chicken breasts, chopped
Oil for deep frying
Whisk eggs and milk together in a shallow bowl; set aside. Place bread crumbs in a pie pan. Soak chicken in egg mixture; coat with bread crumbs. Cover the bottom of a 12 inch skillet with oil; heat until hot. Add chicken; cover and heat for 15 minutes. Uncover and flip chicken; heat until juices run clear when chicken is pierced with a fork; set aside and keep warm. Blend remaining egg mixture and bread crumbs together; add additional milk or egg to make a thick paste. Drop by tablespoonfuls into same skillet and heat until golden on both sides, about 5 minutes; drain. Serve chicken and fritters together.
