Apple and Cabbage Salad
30 ml canola oil 2 tbsp
2 small onions, sliced 2
1 kg red cabbage, shredded 2 lb
30 ml cider vinegar 2 tbsp
1 tart apple, finely chopped 1
125 ml water 1/2 cup
125 ml hot beef broth 1/2 cup
5 ml sugar 1 tsp
-salt to taste-
In a large saucepan; heat oil over medium heat. Saute onions 3 minutes or until tender. Add cabbage, immediately pour vinegar over cabbage and toss
well. Add remaining ingredients, stirring until well blended. Bring to boil. Reduce heat to low; cover and simmer 45 to 60 minutes or until cabbage is tender crisp.
