Scottish Potato Pie

Scottish Potato Pie
2 lb red potatoes
1 Tbsp butter, melted
1/2 lb bacon
4 oz grated Gruyere cheese
Salt to taste
Preheat oven to 425 degrees.
Butter a 9 inch pie dish.
Arrange the bacon slices on the bottom and sides of the dish. Make sure some
of the slices overhang the edges of the dish slightly.
Peel and thinly slice the potatoes.
Rinse the potato slices and dry completely.
Place 1/3 of the potato slices over the bacon in the dish.
Sprinkle 1/3 of the cheese over the potatoes.
Sprinkle with salt to taste.
Repeat these layers twice more.
Fold the overhanging bacon on the top
Place in the oven and bake for 50 minutes or until done. You can check by
piercing the potatoes with a fork to see if they are tender.
Let stand 2 minutes before slicing.
