Double Feta Potato Pie

Double Feta Potato Pie
Dough
1 cup flour
3-1/2 ounces feta cheese
4 ounces butter, plus extra butter for pan
1 egg
Filling
14 ounces potatoes
11 ounces feta cheese
6 large eggs
5 tablespoons milk
2 tablespoons butter
Salt
For dough, combine flour, crumbled feta and cut-up cold butter. Cut with a
knife to form crumbs. Add egg and quickly form the dough. Refrigerate for 30
minutes. For filling, boil potatoes in their skins, peel while hot, and
mash. Heat the milk. Put butter into hot milk and combine with mashed
potatoes. Add 4 lightly beaten eggs. Season with salt. Stir to combine. Add
chunks of feta and stir again. Butter a 10-inch springform pan. Arrange
dough in the bottom of prepared pan with a 1-inch overhang. Pierce dough
with a fork. Spread filling over crust. Beat the 2 remaining eggs and pour
over filling. Fold the overhanging edges of crust over the filling. Bake at
350 degrees for about 50 minutes.
