Potato Pies With Cheese
Dough
5-6 potatoes
2 eggs
3 heaping tablespoons flour
Salt to taste
Filling
3-1/2 to 11 ounces hard cheese
Additional ingredients
Bread crumbs
Oil
Cook potatoes in their skins, cool, peel and process in a blender or a meat
grinder. Add eggs, flour, salt to taste and mix well. Slice cheese into
strips. Place part of the dough onto a floured board and form into a log.
Cut log into slices and flatten each slice into a round. Repeat this
procedure with the remaining dough. Put cheese into the center of each
potato round, the amount of cheese and thickness is determined by personal
preference. Form pies and dip them in bread crumbs. Fry in oil until golden.
