Pepe’s Coconut Bread (12)
1 stick butter, softened
1 c. sugar
2 eggs
2 tsp. coconut extract
2 c. sour cream
1 c. shredded coconut
2 c. flour
1 tsp. soda
1 tsp. baking powder
Cream butter and sugar until sugar has dissolved. Beat in eggs and extract. Beat in sour cream. Add coconut. Sift dry ingredients together and beat into batter just until mixed. Spoon into a greased loaf pan. Bake at 350F 45 min. until a pick comes out clean.
