Elvis Presley's Tomato Fritters (4)
2 medium tomatoes
1/2 cup flour, PLUS 2 tablespoons flour
1/2 teaspoon sugar
1/2 teaspoon baking powder
1 egg, beaten
1/4 teaspoon Worcestershire sauce
1/4 cup Gruyere
oil for deep frying
Bring a large saucepan of water to boil. Plunge tomatoes in water, and hold them there for about 1 minute. Remove tomatoes from water and hold them under cold running water to remove skins. Cut tomatoes horizontally, and remove seeds. Coarsely chop tomatoes. In a mixing bowl combine flour, sugar, and baking powder. Add beaten egg, tomatoes, Worcestershire sauce, and cheese, stirring to coat tomatoes. Shape mixture into patties or balls, and deep fry in hot oil for about 30 seconds on each side or until golden. Drain on paper towels.
