Easy Tomato Sauce
Metric Ingredient Imperial
1 large shallot, finely diced 1
15 ml canola oil 1 tbsp
2 ml salt 1/2 tsp
1 ml pepper 1/4 tsp
1 can crushed tomatoes (14 oz / 398 ml) 1
1 can diced tomatoes (14 oz / 398 ml) 1
1 clove garlic, crushed 1
7 ml ground cumin 1 1/2 tsp
7 ml chili powder 1 1/2 tsp
1 ml paprika 1/4 tsp
50 ml cilantro, chopped 1/4 cup
In a saucepan; saute shallots in oil with salt and pepper over low heat for 2 minutes.
Add tomatoes, garlic, cumin, chili powder and paprika. Bring to a boil. Turn heat down and simmer for 15 minutes.
Add cilantro, stir, remove from heat. Pour over favourite pasta or in enchiladas.
