Amish Hot Roast Hamburger

Amish Hot Roast Hamburger​

Makes 6-8 servings

Prep Time: 30 minutes

Baking Time: 1-3 hours


1 pound hamburger

²/³ cup tomato juice

½ cup dry bread crumbs

¼ cup ketchup

1 tsp. salt

2 tsp. Worcestershire sauce

¼ tsp. pepper

6-8 medium potatoes, sliced ½-¾" thick

4-6 medium carrots, sliced

1 large onion, sliced

parsley

salt and pepper to taste

1. In large bowl, combine hamburger, tomato juice, bread crumbs, ketchup, salt, Worcestershire sauce, and pepper.

2. Mix well.

3. Shape into loaf.

4. Place into a large, greased casserole dish or roaster.

5. Add potatoes, carrots, and onions in layers around meat loaf.

6. Sprinkle with parsley, salt, and pepper.

7. Bake at 300° for 2-3 hours, or at 375° for 1-1½ hours
