1/2 c. rice vinegar
2 Tbsp. sugar
1 tsp. salt
2 Tbsp. chopped red chilies or 1 Tbsp. dried
1/2 c. sliced shallots
2 c. sliced cucumbers
2 Tbsp. chopped peanuts
2 Tbsp. chopped cilantro
Green onion for garnish

Combine first 3 in a saucepan and cook over low heat, stirring constantly, until dissolved. Cool to room temp. Mix with next 3 well. Serve immediately sprinkled with remaining or cucumbers will become too soft.
