SWEET & SPICY PEPPER GRAVY, From Sugar

FOR SLICED ROAST BEEF

Prepare a beef roast of your choice. When done, slice and keep warm.

Gravy:

1/4 cup oil
2 sweet red bell peppers, cut into strips
2 sweet green bell peppers, cut into strips
1 large onion, sliced
3 cloves garlic, finely chopped

2 jalapeno peppers and 1 serrano pepper, seeded and white ribs removed; finely chopped

2 tablespoons flour
Dash cayenne
Dash cumin
1/8 teaspoon white pepper
1/8 teaspoon black pepper
2-1/2 cups beef broth

Heat oil until hot. Stir in red and green peppers, onion, garlic and the chili peppers. Cook, stirring constantly, until vegetables are crisp-tender.

Mix flour, cayenne, cumin, white, and black pepper and sprinkle over bell peppers mixture. Cook, stirring constantly, about 2-3 minutes.

Stir in beef broth. Cook, stirring occasionally until mixture thickens and boils.

Serve over the sliced beef and other side dishes, such as mashed potatoes and rice.
