Sweet and Savory Sausage Balls
Makes 50 small appetizers
1 lb. ground pork sausage
1 cup apple butter
1/2 cup orange marmalade
3 tbs. lemon juice
1/4 tsp. salt
1/2 tsp. ground ginger
Preheat the oven to 400°. Form the sausage into 1" balls. Use about a
teaspoon sausage for each ball. Place the sausage balls on a baking sheet.
Bake for 15 minutes or until the sausage balls are done and no longer
pink. When the sausages are done, make the sauce. In a large saucepan
over low heat, add the apple butter, orange marmalade, lemon juice, salt
and ground ginger. Cook only until the orange marmalade is melted.
Add the sausage balls and simmer for 15 minutes. Place the sausage balls
and sauce in a chafing dish to serve.
