Speedy Peanut Butter Cookies

That's correct...there's no flour in these cookies!

1 c. sugar

1 c. creamy peanut butter

1 egg

Blend ingredients together; set aside for 5 minutes. Scoop dough with a small ice cream scoop; place 2 inches apart on ungreased baking sheets. Make a crisscross pattern on top of each cookie using the tines of a fork; bake at 350 degrees for 10 to 12 minutes. Cool on baking sheets for 5 minutes; remove to wire rack to finish cooling. Makes 12 to 15.
