Southern Style Skillet Fried Chicken
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 tablespoon seasoned salt
1/2 teaspoon garlic powder
1/2 tablespoon pepper
2 cups milk
3 eggs
Canola oil
Rinse chicken; pat dry. In bowl, combine flour, salt, paprika, seasoned salt, garlic powder and pepper. In another bowl, combine milk and eggs. Dip chicken into milk mixture. Coat with flour mixture. In skillet, heat 1/4 inch oil to 325 degrees. Place chicken into oil, skin side down. Cover tightly; cook for 10 minutes, until light golden brown. Turn gently. Cover; cook for 10 minutes, until light golden brown. Uncover skillet; cook for 5 minutes to crisp chicken.
