Savory Fritters

2 c. diced cooked meat
1 large onion, chopped
1/2 green bell pepper, chopped
2 slices bacon, diced
1 Tbsp. olive oil
1 c. flour
2 large eggs, separated
1/2 c. milk
salt, pepper
deep fat

Cook onion, green pepper and bacon in oil until soft. Drain well. Beat flour, egg yolks and milk until smooth. Add seasonings. Add meat and vegetables. Fold in stiffly beaten egg whites. Drop by Tbsp. into very hot fat. Cook until puffed and brown, 1-2 min. Drain.
