QUICK MASHED POTATO FUDGE

3 sq. bitter chocolate
3 tbsp. butter
1/3 c. mashed potatoes
1/8 tsp. salt
1 tsp. vanilla
1 lb. powdered sugar
Melt chocolate and butter over hot water. Then add mashed potatoes, salt and vanilla. Mix thoroughly and blend in powdered sugar. Knead until smooth. Press
into 8 inch square pan. Let it cool and then remove and cut into squares.
