POLISH COTTAGE CHEESE CAKE

8 lg. graham crackers
1 tbsp. sugar
4 tbsp. melted butter
1/4 tsp. cinnamon
1 lb. dry cottage cheese
4 eggs
1 c. sugar
1/2 tsp. salt
1/4 c. flour
1/2 tsp. vanilla
1 c. 20% cream
Juice and rind of 1 lemon
Roll crackers until fine. Add 1 tablespoon sugar, melted butter, and cinnamon. Mix and press into the sides and bottom of 8 x 11 inch pan. Save approximately
2 tablespoons of crumb mixture to sprinkle over top of cake. Run cheese through blender or food processor until just smooth. Add salt to the eggs and beat
until thick. Add sugar and lemon juice. Grate the rind and add to sugar and lemon juice along with vanilla and cream. Carefully fold in cheese and flour.
Pour into pan and add cracker crumbs to top. Bake 1 hour in 250 degree oven. Turn off heat and leave in oven for 1 hour.
