1 (1-POUND) PACK SMOKED SAUSAGE

1 (16-OUNCE) BAG DRIED PINTO BEANS, SOAKED OVERNIGHT

SALT AND PEPPER

2 CUPS UNCOOKED RICE (NOT MINUTE RICE)



Cut the sausage into 1/2-inch pieces. In a large pot combine the sausage, beans, and salt and pepper to taste. Add enough water to cover the beans. Bring the water to a full boil for 10 minutes. Reduce the heat to low, cover the pot, and simmer for 2 to 3 hours. Add water

as needed. Cook the rice according to the instructions on the bag. Serve the rice topped with the beans and sausage.
