Oven Fried Chicken From Helen

Oven Fried Chicken From Helen

3/4 cup unsalted butter
I just use salted, and don't add salt
3 garlic cloves minced,
Or you can get it minced in a jar found in your produce section
2 cups fresh breadcrumbs, I cut back on that I just use Italian breadcrumbs
2/3 cup Parmesan cheese, I just use the stuff in the can
1 tsp kosher salt, I omit that, since I'm using salted butter
1/4 tsp black pepper
It says one whole chicken cut up in to 10 pieces, I just used legs or
thighs, use what you prefer.

Heat oven to 350.
In a small saucepan, melt butter with the garlic. I skip that step, and just
add the garlic to some melted butter.
I just melt some butter in the microwave.
And this is why I skip this step. It says, Transfer in to large bowl, and
let cool to room temperature.
In a large bowl, mix breadcrumbs, cheese, salt and pepper.
Dip each chicken piece, one at a time, in to the melted butter, transfer to
the breadcrumb mixture, and turn to coat, on all sides.
Arrange chicken, in one flat layer, on a large cookie sheet.
Drizzle any remaining butter over chicken, and bake until lightly browned
and cooked through, 50 to 60 minutes.
It's good! I wish I could make you some!
Enjoy!
