Old-Fashioned Lima Bean Soup

A hearty recipe that you don't have to stew over!

3-1/2 to 4 lbs. chicken

1-lb. pkg. dried lima beans

2 carrots, sliced

1 stalk celery, sliced

1 onion, chopped

Cover chicken with water in a large stockpot; gently boil for one hour. Lower heat; add beans, carrots, celery and onion. Simmer until beans are tender, about 2 hours. Remove chicken; bone and chop. Return chicken to stockpot; heat through. Serves 6 to 8.
