1 med. red cabbage, shredded (about 7 c.)
Water
2 Tbsp. butter
1 beaten egg
1/4 c. vinegar
3 Tbsp. sugar
2 tsp. prepared mustard

Cook cabbage in a small amount of boiling salted water 8-10 min. until tender. Drain well and set aside. In same pot, melt butter. Mix egg with next 3 and stir into butter. Add cabbage. Cook and stir 1-2 min. until coated and heated through. Line a serving bowl with cabbage leaves and add hot cabbage mixture. Serve immediately.
