Hidden Pear Salad
1 (16 ounce) can pears, drained and juice reserved
1 (3 ounce) box lime gelatin mix
1 (3 ounce) package cream cheese, softened
1/4 teaspoon lemon juice
1 (1.3 ounce) package whipped topping mix
Pour pear juice into a saucepan; bring to a boil over medium heat. Remove from heat; stir in gelatin until dissolved. Set aside to cool to room temperature. Puree pears in a blender; set aside. Blend cream cheese and lemon juice until light and fluffy; mix in pears. Prepare whipped topping according to package directions; fold into pear mixture. Add cooled gelatin; pour into a mold and chill overnight.
Makes 6 to 8 servings.
