Apple Cider Salad

Apple Cider Salad
Preparation time: 1 hr, 12 minutes
Cooking time: 3 minutes

4 cups apple cider, divided
7 ounces orange gelatin
1 cup raisins
1 cup apple, chopped
1 cup celery, chopped
1 tablespoon lemon peel, grated
2 tablespoons lemon juice

In a saucepan bring 2 cups apple cider to a boil; remove from the heat. Add orange gelatin and stir until dissolved. Stir in raisins; cool. Add 2 cups
apple cider then chill until slightly thickened. Stir in chopped apple, chopped celery, grated lemon peel, and lemon juice. Pour into a lightly oiled mold
and chill until set.
