Geronimo's Pumpkin Fritters
2 cups pumpkin puree
1 cup flour
1 tsp. vanilla
1/2 tsp. salt
Powdered sugar
3 eggs, lightly beaten
2/3 cup flour
1 tsp. nutmeg
Butter
In bowl, combine 2 cups pumpkin puree, eggs, flour, sugar, vanilla, nutmeg and salt. In heavy skillet, heat butter over high heat until very hot. Drop the pumpkin mixture by tablespoons full into the butter and cook until the fritters are browned on both sides. Remove with slotted spoon and dust with powdered sugar.
