Frozen Cucumber Salad

A quick & easy way to use up all those extra cucumbers from the summer harvest.

2 qts. cucumbers, peeled and sliced

2 onions, sliced

1 T. salt

1 c. vinegar

1-1/4 c. sugar

Combine cucumbers, onions and salt; set aside for 4 hours. Add vinegar and sugar to a heavy saucepan; heat over medium heat until sugar dissolves. Drain cucumbers; add to vinegar mixture. Spoon into a freezer-safe container with a lid; freeze. Remove from freezer to partially thaw before serving. Makes 8 to 10 servings.
