Cowboy Beef Stew
5 to 6 potatoes, peeled and diced
2 carrots, peeled and thinly sliced
1 pound ground beef
1 tablespoon all-purpose flour
1 (8 ounce) can tomato sauce
Place potatoes and carrots in a saucepan; add enough water to cover vegetables by an inch. Boil gently until tender, about 30 minutes; set aside. Shape ground beef into one-inch meatballs; brown in a 12 inch skillet. Add undrained vegetable mixture; heat for 5 minutes and set aside. Whisk flour and 1/2 cup water together in a small mixing bowl; pour in tomato sauce. Stir into beef mixture; cover and simmer until thickened, about 15 minutes.
Makes 4 servings.
