1 tablespoon olive oil
1 lb. boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 medium carrots, peeled and diced
1 small onion, diced
3 celery stalks, diced
1 small zucchini, diced
1 (14.5 ounce) can petite diced tomatoes, NOT drained
2 teaspoons minced garlic
½ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon dried thyme
6 cups chicken broth
1 (9 ounce) package refrigerated cheese tortellini
2 cups fresh baby spinach leaves (or more, as desired)
Optional garnish: chopped fresh parsley or grated Parmesan cheese

Instructions

1. Heat olive oil in a large pot over medium heat. Season chicken liberally with salt and pepper, and then add to the pot and sauté until browned (about
3-4 minutes). Remove chicken to a plate and set aside.
2. Add carrots, onion, and celery to the pot. Cook, stirring occasionally, until tender (about 10 minutes). Stir in zucchini, tomatoes, garlic, basil,
oregano, thyme, and chicken broth. Increase heat to high and bring to a boil.
3. Stir in chicken and tortellini; reduce heat, and simmer until tortellini is cooked through (about 5-6 minutes). Add spinach and continue to cook and
stir for 1 more minute, or just until the spinach wilts.
4. Season with salt and pepper, to taste. Garnish with fresh parsley or Parmesan cheese and serve!
