Everyone needs a great recipe for chicken noodle soup! I love homemade
soup but do not have enough time anymore to spend hours making it, so I
created this simpler version.
5 to 6 boneless, skinless chicken thighs
2 c. baby carrots, chopped
1 c. celery, chopped
1/2 onion, chopped
2 T. garlic, minced
1 t. poultry seasoning
1 t. dried parsley
1 t. seasoned salt
3 cubes chicken bouillon
12-oz. pkg. fine egg noodles, uncooked
Place all ingredients except noodles into a large soup pot; cover with
water. Bring to a boil; reduce heat to a simmer. Cook, uncovered, until
chicken and vegetables are tender, about one hour. Remove chicken; let
cool slightly. Stir in noodles. Simmer until noodles are done, about 5
minutes. While noodles are cooking, dice chicken and return to soup.
Adjust seasoning as needed. Makes 8 servings.
