Veal Parmesan

Veal Parmesan
1 pound veal round steak
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 egg
3 tablespoons water
1 (8 ounce) can tomato sauce
1/3 cup salad oil
1/2 teaspoon oregano
Cut meat into four serving-size pieces; pound until 1/4 inch thick. Stir together bread crumbs, Parmesan cheese, salt, pepper and paprika. Beat eggs slightly. Dip into egg; dip into crumb mixture, coating both sides. Heat oil in large skillet; brown meat on both sides. Reduce heat; add water. Simmer in covered skillet for 30 to 40 minutes. Remove from skillet; keep warm. Pour tomato sauce into skillet; stir in oregano. Heat to boiling; pour over meat.
Makes 4 servings.
