2 cucumbers, peeled and sliced into half-circles
1 small red onion, thinly sliced
3 tablespoons snipped fresh basil
½ cup extra virgin olive oil
2 tablespoons red wine vinegar or apple cider vinegar
Kosher salt and black pepper, to taste

2. In a separate bowl or jar, whisk or shake together olive oil and vinegar. Pour over vegetables and toss to coat. Season with salt and pepper, to taste.
