The Professor’s Collegiate Colcannon (8-10)
5-6 c. freshly mashed potatoes
Butter, milk
Salt, pepper
1/2 c. chopped green onion
6 c. roughly chopped green cabbage
1 tsp. caraway seeds (opt)
2 c. diced leftover ham or 1 lb. crisp cooked bacon, crumbled
Butter, paprika
Combine first 6. Steam cabbage and caraway seeds. Add to potato mixture. Add ham. Turn into a shallow baking dish. Bake at 400F 20-25 min. until lightly browned. Dot with butter and sprinkle with paprika
