Sour Creamed Scalloped Potatoes
3 pounds potatoes -- pared and sliced
Salt and pepper to taste
1/4 cup butter
1/2 cup diced red peppers
1 cup sliced green onions
1/4 cup flour
2 1/3 cups milk
1 1/4 cups sour cream
1 cup grated white Cheddar cheese Place potatoes in a
buttered or vegetable sprayed 13x9-inch pan.
Sprinkle with salt and pepper to taste. Melt butter in a saucepan and saute
red peppers and onions until tender.
Stir in flour and salt and pepper to taste until smooth. Gradually stir in
milk until smooth, cooking over medium heat until thickened.
Remove from heat;
stir in sour cream.
Pour sauce over potatoes and sprinkle with cheese. Cover lightly with foil
and bake about 1 hour or potatoes are tender at 350 F. Top with additional
sliced onions and shredded cheese upon removing from oven, if desired.
