Pork Chow Mein

Pork Chow Mein
I made this on May 3.
I've made this recipe before, but this time, I used chicken breast and it
turned out just as good.

1-1/2 pounds pork, cut in to thin strips or cubes
1 Tbsp. oil
3 cups thinly sliced celery
1 cup onion, sliced
1 cup sliced fresh mushrooms
I didn't have any fresh, so I used a can of mushrooms instead.
2 Tbsp. oil
2-1/2 Tbsp. cornstarch
1/4 cup water
1 can, condensed beef broth
1/4 cup soy sauce
1/2 pound bean sprouts
1 5 ounce can sliced water chestnuts, drained
Rice or chow mein noodles.

In large skillet, cook pork in oil, until done, about 10 minutes.
Remove meat. I never do this, I just add the next 3 ingredients, and
continue on with the remainder of the recipe.
Cook celery, onions, and mushrooms in oil, till crisp tender, about 2 to 3
minutes, stirring often. For me, it takes longer than that.
Blend cornstarch and water, add beef broth and soy sauce.
Stir in to vegetables.
Add meat, bean sprouts, and water chestnuts. I omit the chestnuts, but next
time, I might add them in.
Heat, and stir, until thickened.
