Peanut Brittle

1 cup sugar

One half cup light corn syrup

One eighth teaspoon salt

1 and 1 half cup salted roasted peanuts

1 teaspoon butter

1 teaspoon vanilla

1 teaspoon soda

Makes 1 pound.

Combine sugar and corn syrup in 2 quart casserole or mixing bowl. Microwave on high for 5 minutes. Microwave 2 to 5 minutes stirring after 2 and 4 minutes. Cook until syrup and peanuts are a light brown. Stir in butter, vanilla and soda until light and foamy. Spread about 1 quarter inch thick on well butter cookie sheet. Put butter on the spatula you spread it with. It does wonders.
