Oven Fried Rice

Oven Fried Rice
This is a fix it and forget it style fried rice recipe. It tastes like your
favorite Chinese fried rice but it's baked in the oven instead. Tip: If you
want it to taste even more like real fried rice, scramble an egg and stir it
in just before serving the rice.

ingredients

2 cups rice
4 cups water
1/4 cup oil, more if needed
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 tablespoons soy sauce
1 package onion soup mix
1 can mushrooms, undrained

directions

Combine all ingredients.

Place in large casserole and cover. Bake at 350 degrees F for 1 1/2 hours
or until rice is done.
