Orchard Fresh Devils
6 hard-boiled eggs
2 tablespoons plain low-fat yogurt
1 tablespoon minced, unpeeled red apple
1 tablespoon minced celery
1 tablespoon finely chopped pecans
1 tablespoon honey
1 teaspoon lime juice
1 dash curry powder
1 dash salt
Cut eggs in half lengthwise. Remove yolks and set whites aside. Mash
yolks with fork and blend in remaining ingredients. Refill whites,
using 1 heaping tablespoon of yolk mixture in each egg half.
Makes 12 servings.
