Old Fashioned Macaroni Salad
Metric Ingredient Imperial
500 g elbow macaroni 1 lb
250 ml green pepper, finely chopped 1 cup
250 ml carrots, finely chopped 1 cup
250 ml celery, finely chopped 1 cup
250 ml red onion, finely chopped 1 cup
500 ml mayonnaise 2 cup
125 ml sweet pickle relish 1/2 cup
30 ml cider vinegar 2 tbsp
5 ml dijon mustard 1 tsp
- salt & pepper to taste -
Cook pasta according to package directions, 7 to 8 minutes, or until just done. Drain when cooked and let cool slightly.
Meanwhile, in a large serving bowl, add green pepper, carrots, celery and onion.
Add pasta to vegetable mixture and stir to combine. Add mayonnaise, pickle relish, vinegar and mustard. Stir to combine. Add salt and pepper to taste. Cover bowl and refrigerate for at least 1 hour.
