Old-Fashioned Fruit Salad Dressing

Our favorite when poured over a bowl of mandarin oranges, pine-apple chunks, raspberries, tart cherries and mini marshmallows.
2 eggs 1
1/4 c. pineapple juice
2 T. sugar
1. T. butter
1 pt. whipping cream
Heat first 4 ingredients together in a heavy saucepan over medium heat until mixture boils; reduce heat, whisking until mixture thickens. Set aside to cool to room temperature. Whip whipping cream until soft peaks form; fold into cooled dressing. Cover and refrigerate until serving. Makes about 2 cups.
