Ingredients

¾ cup chocolate chips

1 tablespoon oil I used coconut oil but canola oil would be a fine substitute

1 ½ cups crisp rice cereal such as Rice Krispies

2 cups miniature marshmallows

¼ cup coarsely chopped salted peanuts

Instructions

1. In a small bowl, melt chocolate chips and oil in the microwave until smooth, stirring every 30 seconds (it took my chocolate about 1 minute total).

2. In a large bowl, toss together remaining ingredients.

3. Pour melted chocolate over cereal mixture and gently toss until completely coated.

4. Use a tablespoon measure to drop onto a parchment-lined baking sheet OR into lined mini muffin cups.

5. Refrigerate for at least 30 minutes, or until chocolate is set and cookies are hard.
