1 tablespoon butter
1/2 cup chopped mushrooms
1/4 cup chopped onion
1/4 cup chopped chives
16 ounces shredded Provolone (4 cups)
2 ounces sliced prosciutto, finely chopped
4 eggs, beaten
1/2 teaspoon white pepper

Heat oven to 350?. In 8-inch skillet melt butter over medium-high heat. Add mushrooms and onion; continue cooking until liquid is absorbed (2 to 3 minutes). Remove from heat; cool 10 minutes.
In large bowl stir together chives, cheese, prosciutto, eggs and pepper. Stir in mushrooms and onion.
In greased and floured 8-inch square baking pan spread cheese mixture. Bake for 30 to 40 minutes or until toothpick inserted in center comes out clean. Let stand 5 minutes; cut into squares.
