Nanna's Turkey Giblet Gravy

Nanna's Turkey Giblet Gravy

Serves: 24
Nanna's Recipe
1/4 cup finely-diced onions
5 turkey necks
1 16-ounce package chicken gizzards
1 12-ounce jar Heinz Chicken Gravy
4 jumbo eggs (boiled and chopped)
1/2 small jar diced pimentos
Turkey broth (from turkey)
Black pepper (to taste)
Salt (to taste)
Accent (to taste)
Chicken liver (if desired)
1/4 cup cornstarch
1/4 cup cold water
In a 4 quart pressure cooker, place all giblets. Add water to
cover giblets. Season with salt, pepper and Accent. Cook on
high heat until it starts to boil. Cover with lid to start
pressure. Reduced to medium-high heat. When pressure is on the
pot, cook for 30 minutes, Turn burner off and let pressure
reduce on its on. Remove lid and allow to cool. Remove meat
from necks and chop all of the giblets in small pieces. Add
pimentos. Place in large stockpot and add turkey broth. Bring to
a boil. Mix 1/4 cup cornstarch and 1/4 cup cold water. Pour a
little of the cornstarch mixture in at a time while stirring
constantly until desired consistancy has been met. Enjoy.
