MY Hungarian Pepper and Tomato Stew

MY Hungarian Pepper and Tomato Stew

It's called Lecso, pronounced Letcho.
1 tablespoon of vegetable oil
2 to 3 bell peppers, any color you like, cut in to strips
2 onions, diced, or sliced
1 to 2 teaspoons of Paprika
1 teaspoon of minced garlic
1 large can of diced tomatoes
1 cup of long grain Uncle Ben's white rice
1 to one and a half pounds of sliced or diced Polish sausage.

Heat oil in large pot.
Add peppers, onions, garlic, and paprika.
Stir, occasionally, for a few minutes, until peppers and onions get soft.
Maybe about 10 minutes.
Add can of tomatoes.
Bring to boil, then add rice and stir.
When rice is cooked, after about 15-20 minutes, add your sausage, mix,
and heat through.
