MARVELOUS APPLE MUFFINS

Yield: 12 muffins



2 c. sifted all-purpose flour

2 tbsp. sugar

1 tbsp. baking powder

1/2 tsp. salt

1 c. milk

1 egg, beaten

1/4 c. butter

1/2 c. apples, peeled and chopped

1/4 c. sugar

1/2 tsp. ground cinnamon



Combine first 4 ingredients in a small mixing bowl; make a well in center of mixture. Combine milk, egg and butter; add to flour mixture stirring just until moistened. Fill greased muffin tins 2/3 full; top with chopped apples.



Combine 1/4 cup sugar and cinnamon; sprinkle 1 teaspoon sugar mixture over each muffin. Bake at 425F for 25 minutes or until lightly browned.
