Marshmallow-Filled Chocolate Cake

Marshmallow-Filled Chocolate Cake

1 pound chocolate
1/2 cup creme de cacao
4 eggs, separated
12 tablespoons unsalted butter (1 1/2 sticks)
1/3 cup all-purpose flour
1 1/2 pounds miniature marshmallows
1/3 cup sugar
pinch of salt
Preheat oven to 375 degrees, line the bottom of a 9-inch cake pan with
wax paper, butter and flour it well.
Melt 8 oz. chocolate with 1/4 cup creme de cacao over low heat, stir to
blend
Remove pan from heat, add egg yolks one at a time, beat well after each
one
Stirring constantly, return to heat, beat in butter 1 tbsp at a time.
Then stir in flour till blended well.
Beat egg whites and salt until they form soft peaks, add 1/3 cup sugar
and beat till glossy.
Fold egg whites into batter 1/3 at a time. Pour into pan.
Bake about 20 minutes. Cake will be slightly puffed, not completely
cooked in the center.
Cool in pan 45 minutes. Turn out onto plate and scoop out top 1/2 inch
of cake, leave a 1 inch border at the edges.
Mix the marshmallows with 1 tbsp creme de cacao. Fill cake with
marshmallows.
Melt remaining chocolate with 3 tbsp creme de cacao. Glaze cake.
