Low Sugar Pecan Cookies

Low Sugar Pecan Cookies
Serves: 20

Ingredients
1½ cups melted butter (3 sticks)
½ cup sugar (sucanat, raw, brown)
1 teaspoon vanilla extract
3 cups whole grain flour (I use freshly ground soft white wheat)
½ cup pecan pieces toasted in 2 Tablespoons butter

Instructions
Toast pecans by stirring them in a small saucepan over low heat for 2-4 minutes. Set aside. In a mixing bowl, stir together butter, sugar, vanilla, and flour. Fold in toasted pecans. Scoop ½ inch sized balls of dough onto a cookie sheet. Press balls down with the end of a drinking glass. Bake in a 350 degree oven for 10-15 minutes or until cookies are golden brown.
