Jack Daniel's triple chocolate brownies
Brownies:
8 ounces semisweet chocolate chips
1/2 cup (1 stick) butter
3 tablespoons cocoa powder
2 eggs, beaten
1 cup granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
3/4 cup all-purpose flour
Ganache
16 ounces bittersweet chocolate chips
2 cups heavy cream
1/2 cup Jack Daniel's bourbon
1 cup confectioners' sugar
In a medium heatproof bowl set over a pan of simmering water, melt the
chocolate chips and butter, stirring occasionally until mixture is smooth.
Whisk in the cocoa powder until smooth; set aside to cool slightly.
In a mixing bowl, combine eggs, sugar, vanilla and salt; mix until blended.
Whisk the warm chocolate mixture into the egg mixture; then stir in the
flour. Mix until just combined.
Pour batter into a greased 8-inch square baking pan, spreading evenly. Bake
at 350 degrees for 30 to 35 minutes, or until a toothpick inserted in center
comes out with a small amount of sticky crumbs. Cool on a wire rack.
For ganache, place chocolate chips in a medium bowl. In a small saucepan,
heat cream over medium heat. Bring almost to a boil, watching carefully.
Stir in bourbon.
Pour hot cream mixture over chocolate chips in bowl; let sit 2 to 3 minutes,
or until chocolate is melted. Whisk until smooth; stir in confectioners'
sugar. Spread over warm brownies.
Cool, then cut in squares.
Makes 16 2-inch squares.
