Inside-Out Sandwiches

Inside-Out Sandwiches
4 bread slices, each about 1/4 inch thick
3-1/2 ounces ham or any kind of cold cut sausage
2 ounces hard cheese
2 eggs
3 medium raw potatoes
1 medium onion
Salt to taste
Oil for frying
Finely chop the ham. Coarsely grate the cheese. Peel the potatoes and the
onion and puree in a food processor, or very finely grate. Combine all these
ingredients in a bowl, add eggs and salt. Cut each bread slice in half. Coat
one side of each piece of bread with potato mixture and place in a skillet
with hot oil, potato side down. Coat the top side of bread with the potato
mixture while bread is already in the skillet. Fry on both sides until a
golden crust forms.
