IHOP swedish pancakes
SWEDISH PANCAKES CAN BE SERVED FOR BREAKFAST OR DESSERT, BUT SWEDES PREPARE THEM FOR SUPPER.
3 eggs
1½ cups sifted all-purpose flour
1 tablespoon granulated sugar
½ teaspoon salt
1 cup milk, plus extra as needed
½ cup cream or milk
2 tablespoons butter, melted
2 cups lingonberry sauce
Confectioners’ sugar, for garnish
1. Beat the eggs very well.
2. Sift together the flour, sugar, and salt.
3. Add ½ cup of the milk to the eggs and fold in the flour mixture.
4. Then add the remaining ½ cup milk, the cream, and butter. Add more milk if the consistency is too thick.
5. Ladle the batter onto the surface of a hot griddle or crepe pan, creating 5-inch-diameter circles. These pancakes should be thin and will need only 1 or 2 minutes on each side to brown.
6. Place 2 tablespoons of lingonberry (Swedish cranberry) sauce in the center of each pancake and roll the pancake up like a jelly roll.
7. Serve sprinkled with confectioners’ sugar.
